The Secret to Satisfying Sweet Cravings on a Diet Without Breaking Ketosis (bonus at the end)
Anyone on a low-carb journey or needing to control their blood sugar knows that late afternoon is the most critical time. The craving for a creamy, comforting sweet treat hits hard, and store-bought options are often full of artificial sweeteners with aftertaste or ingredients that sabotage your results. But what if you could savor a truffle with the perfect tropical combination of creamy coconut and citrusy pineapple, completely guilt-free?
The following recipe was inspired by the famous sweets of tropical parties, but redesigned for those who don't compromise on health. The big game-changer here was replacing the traditional condensed milk base with a rich, velvety cream cheese texture. This not only eliminates added sugar but also provides a melt-in-your-mouth texture, far superior to most of the healthy sweets you've ever tasted.
You should read and try this recipe because it solves three major problems at once: speed (no cooking required), satiety (thanks to the healthy fats from the coconut and cheese), and versatility, working both as a post-workout snack and as an elegant dessert to serve to friends. If you're looking for a sweet treat that respects your body and delivers the same pleasure as a traditional pastry, keep reading for the step-by-step instructions.
Tropical Pineapple and Coconut Truffles (Sugar-Free)
Equipment
• Cookie scoop or small ice cream scoop
Ingredients
• 8 ounces (approx. 225g) cream cheese (1 block at room temperature)
• 1/4 cup unsweetened chopped pineapple (well drained)
• 3/4 cup unsweetened shredded coconut (finely grated)
• 1/4 teaspoon pineapple emulsion (such as LorAnn)
• 1/3 cup granulated sweetener (such as Splenda)
• 3 drops yellow food coloring (optional)
Instructions
1. Prepare the fruit: Drain the chopped pineapple in a sieve, pressing lightly, until almost dry to avoid ruining the consistency of the dessert.
2. Create the creamy base: In a bowl, beat the room temperature cream cheese until very creamy and smooth.
3. Flavor: Incorporate the pineapple emulsion into the whipped cream cheese.
4. Add the flavors: Add the well-drained pineapple, the yellow food coloring (if using), and the granulated sweetener. Continue mixing well.
5. Add texture: Incorporate half of the finely grated coconut into the dough and mix until uniform.
6. Firmness: Refrigerate the dough long enough for it to become firm enough to be molded.
7. Shape the truffles: Using the cookie scoop, remove portions of the dough to form balls and gently roll them with your hands to smooth them.
8. Finish: Roll each truffle in the remaining grated coconut until completely covered.
9. Final cooling: Arrange the truffles on a tray or baking sheet lined with parchment paper and refrigerate for approximately 2 hours or until firm.
10. Serve: Keep refrigerated and serve the dessert very cold.
