BUCKEYE BROWNIES (WITH NO ADDED SUGAR)

The Secret to an Unforgettable (and Guilt-Free!) [Bonus at the end]

Who says you have to choose between health and the pleasure of an extraordinary dessert? Imagine biting into a dense, chocolatey brownie base, feeling the salty creaminess of peanut butter, and then the crackle of a velvety chocolate ganache. That's the Buckeye Brownie, an American classic that has been given a revamped version: completely sugar-free.

The story of this combination comes from Ohio, in the United States, where the "Buckeye" (the nut of a local tree) inspired a traditional sweet made of peanut butter covered in chocolate, mimicking the look of the seed. Bringing this tradition to the brownie format creates an experience of contrasting textures and flavors that seem to come straight from the window of a fine confectionery.

You should read and try this recipe because it solves the biggest dilemma for sweet lovers: how to enjoy a comforting and sophisticated dessert without straying from a healthy routine or causing glucose spikes. Whether for a special dinner, to impress friends, or simply to guarantee that perfect midweek treat, this step-by-step guide ensures professional results with accessible ingredients.

🧾 Complete Recipe: Sugar-Free Buckeye Brownies

🧰 Equipment Needed:

• Baking sheet

• Parchment paper or aluminum foil

• Nonstick spray

• Mixing bowls (large and medium)

• Microwave-safe bowls (one preferably with a pouring spout)

• Whisk

• Stand mixer with paddle attachment

• Butter knife

🛒 Ingredients:

Brownie Base

1 cup melted butter

¾ cup brown sugar alternative

¾ cup granulated sweetener

4 eggs

2 teaspoons vanilla extract

1 ½ cups all-purpose flour

1 cup unsweetened cocoa powder

Peanut Butter Layer

1 cup creamy unsweetened peanut butter

2 cups unsweetened powdered sugar

1 teaspoon pure vanilla extract

⅓ cup heavy cream

Ganache and Sauce Layer

1 ½ cups unsweetened chocolate chips

1 tablespoon melted coconut oil

½ cup heavy cream

¼ cup creamy unsweetened peanut butter (reserved for the final sauce)

👩‍🍳 Preparation Method:

1. Brownie Preparation and Base

Oven: Preheat oven to 175°C (350°F). Line a baking sheet with parchment paper or aluminum foil and lightly spray with nonstick cooking spray.

Sugars: In a large bowl, use a whisk to mix the melted butter with the sugar alternatives (brown and granulated) until combined.

Liquids: Add the eggs and 2 teaspoons of vanilla extract to the mixture and whisk well.

Dry Ingredients: In a clean medium bowl, mix the flour and cocoa powder. Add this dry mixture to the large bowl and stir gently just until combined.

Baking: Spread the batter evenly in the prepared baking sheet. Bake for 28 to 30 minutes, until the edges are firm and a toothpick inserted into the center comes out with just a few crumbs. Let the brownies cool completely.

 2. Creamy Peanut Butter Layer

Beat: In a stand mixer fitted with the paddle attachment, beat 1 cup of peanut butter for 1 to 2 minutes until very creamy.

Mix: Scrape down the sides of the bowl, reduce to low speed, and slowly add the unsweetened confectioners' sugar and pure vanilla extract.

Finish the Cream: With the mixer still on low speed, add ⅓ cup of heavy cream in a thin stream. Beat until a smooth cream forms.

Assemble: Spread this mixture evenly over the cooled brownie base.

3. Ganache Topping and Spiral Effect

Ganache: In a microwave-safe bowl, combine the chocolate chips, coconut oil, and ½ cup of heavy cream. Heat in 30-second intervals, stirring constantly, for about 1 1/2 to 2 minutes, until completely melted.

Topping: Pour the chocolate ganache evenly over the peanut butter layer.

Peanut Butter Sauce: In a clean, microwave-safe bowl, heat the remaining ¼ cup of peanut butter for about 30 seconds, until softened.

Decoration: Carefully drizzle the melted peanut butter sauce over the ganache. Use a butter knife to make smooth, swirling motions to create a pattern.

4. Resting and Cutting

Setting: Let the dessert rest for about 1 hour at room temperature until all layers are completely set.

Serving: Cut into squares and enjoy! (Tip: Wipe the knife with a damp cloth between cuts for perfect squares).
