LOW CARB CHICKEN BALLS

Practical and Healthy Snack: Low-Carb Chicken Fritters with Only 3 Basic Ingredients (A gift for you at the end)

Finding delicious snack options that satisfy hunger and help you stay focused on your diet can seem like a challenge. However, with the hustle and bustle of everyday life, all we need are quick, nutritious recipes that the whole family will enjoy. If you are on a weight loss journey, managing diabetes, or simply looking to reduce your consumption of refined flours, this low-carb chicken muffin is the ideal choice.

Besides being an excellent source of high-quality protein from chicken, this recipe stands out for its very low carbohydrate content. The big secret is its practicality: the base only requires three main ingredients that you probably already have in your refrigerator, without any complications or culinary secrets.

To give it that special, crispy exterior, the trick is to coat the patties with a thin layer of oat bran before baking. The result is a golden snack, soft on the inside and perfect for an afternoon snack, post-workout, or even to take in your lunchbox during the week.

📋 Ingredients

• 400g cooked and shredded chicken
• 150g grated mozzarella cheese
• 5 tablespoons light cream cheese
• Parsley, salt and paprika to taste (for seasoning)
• 1 beaten egg (for breading)
• Oat bran as needed (for breading)
• Olive oil (just to grease your hands)

👩‍🍳 Preparation Method

1. Dough Preparation: In a bowl, combine the cooked and shredded chicken, grated mozzarella, light cream cheese and seasonings (parsley, salt and paprika). Mix everything very well with your hands until a homogeneous and firm dough is formed.
2. Shaping: Grease your hands with a little olive oil so the dough doesn't stick. Take small portions and shape the dumplings into your preferred shape (croquette style or balls).
3. Perfect Breading: Dip each shaped dumpling first in the beaten egg and then in the oat bran until well coated.
4. Cooking: Arrange the dumplings on a baking sheet and bake in a preheated oven at 180°C or place in an Airfryer for about 20 to 25 minutes, until golden brown and crispy. Serve hot!
